  • 3 lbs chuck roast, cut into 2-inch cubes
  • 4 slices bacon, diced
  • 2 cups low-sodium beef broth
  • 1 cup Pinot Noir (or other full-bodied red wine)
  • 4 medium carrots, cut into chunks
  • 8 oz cremini or button mushrooms, halved
  • 1 cup pearl onions (or regular onions)
  • 4 cloves garlic, minced
  • 4 sprigs fresh thyme (or 1 tsp dried thyme)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a large Dutch oven, cook diced bacon over medium-high heat until crispy. Remove bacon and set aside.
  3. In the same pot, sear beef cubes until browned on all sides. Remove and set aside.
  4. Sauté pearl onions, carrots, and mushrooms in the remaining fat until lightly golden.
  5. Add minced garlic and thyme; stir for about 1 minute.
  6. Pour in red wine and beef broth; scrape up any bits from the bottom.
  7. Return seared beef and bacon to the pot; stir gently.
  8. Cover and transfer to the oven; cook for about 2 hours until beef is fork-tender.
