  • 1 lb ground beef or turkey
  • 1 cup cooked rice or quinoa
  • 1 cup shredded cheddar or mozzarella cheese
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with parchment paper.
  2. Slice the tops off the bell peppers and remove seeds. Set aside.
  3. In a skillet over medium heat, brown the ground meat for about 5–7 minutes; drain excess fat.
  4. In a bowl, mix cooked meat, rice, spices, and half of the cheese until well combined.
  5. Stuff each pepper generously with the mixture and top with remaining cheese.
  6. Place peppers upright in the baking dish, cover with foil, and bake for 30 minutes. Remove foil for the last 5 minutes until cheese is golden.
