  • 2 cups crushed Oreo cookies
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream, whipped
  • 1 cup chocolate chips (for ganache)
  • 1/2 cup heavy cream (for ganache)

Instructions

  1. Preheat oven to 350°F (175°C). Mix crushed Oreo cookies and melted butter in a bowl. Press firmly into the bottom of a springform pan.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add sugar and vanilla, mixing until well combined.
  3. Fold in whipped heavy cream gently until no streaks remain.
  4. Pour half of the cheesecake mixture over the crust, sprinkle half of the remaining crushed Oreos on top, then layer with the rest of the cheesecake mixture and more Oreos.
  5. Cover and refrigerate for at least 4 hours or overnight.
  6. For ganache, heat heavy cream until simmering, pour over chocolate chips, let sit for 5 minutes, then stir until smooth. Drizzle over chilled cheesecake before serving.
