- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream, whipped
- 1 cup chocolate chips (for ganache)
- 1/2 cup heavy cream (for ganache)
- Preheat oven to 350°F (175°C). Mix crushed Oreo cookies and melted butter in a bowl. Press firmly into the bottom of a springform pan.
- In another bowl, beat softened cream cheese until smooth. Gradually add sugar and vanilla, mixing until well combined.
- Fold in whipped heavy cream gently until no streaks remain.
- Pour half of the cheesecake mixture over the crust, sprinkle half of the remaining crushed Oreos on top, then layer with the rest of the cheesecake mixture and more Oreos.
- Cover and refrigerate for at least 4 hours or overnight.
- For ganache, heat heavy cream until simmering, pour over chocolate chips, let sit for 5 minutes, then stir until smooth. Drizzle over chilled cheesecake before serving.
