  • 14.5 oz can diced tomatoes (fire-roasted recommended)
  • 4 cups low-sodium chicken broth
  • 1 packet taco seasoning
  • Fresh cilantro for garnish
  • Tortilla chips for topping

Instructions

  1. Heat olive oil in a large pot over medium heat. Season chicken breasts with salt and pepper, then cook until golden brown on both sides (approximately 5 minutes). Remove chicken and set aside.
  2. In the same pot, sauté onions and garlic until fragrant (about 3 minutes).
  3. Add bell peppers and diced tomatoes; stir for about 2 minutes.
  4. Pour in chicken broth and add taco seasoning. Bring to a gentle boil, then reduce the heat.
  5. Shred the cooked chicken using two forks and return it to the pot. Stir well.
