  • 1 cup shredded cheddar cheese
  • ½ cup diced bell peppers (red, yellow, green)

  • 1 cup fresh spinach
  • 2 tsp olive oil

Instructions

  1. Wash and slice the bell peppers, onion, zucchini, and rinse the spinach.
  2. In a skillet over medium heat, add olive oil and sauté onions for about 3 minutes until softened. Add bell peppers and zucchini; cook for an additional 5 minutes until tender. Stir in spinach until wilted.
  3. On one tortilla, layer half the cheese, followed by sautéed veggies, then top with the remaining cheese. Fold the tortilla over.
  4. Return the quesadilla to the skillet; cook each side for about 3-4 minutes until golden brown and crispy.
