Instructions
- Cook the orzo pasta in salted boiling water until al dente (about 8-10 minutes). Drain and rinse under cold water.
- While the pasta cooks, chop the cucumber, cherry tomatoes, bell pepper, and onion into bite-sized pieces.
- In a large bowl, combine the cooled orzo with the chopped vegetables and crumbled feta.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Pour over the orzo mixture.
- Toss gently until everything is well coated. Add fresh herbs and mix once more before serving.
