For the cookies:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/4 cup unsweetened cocoa powder
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup mini chocolate chips
- 1/2 cup crushed peppermint candies or candy canes
- 1 tsp peppermint extract
For the topping:
- 1/4 cup powdered sugar (optional)
- Additional crushed peppermint for garnish (optional)
Instructions
- Preheat your oven to 350Β°F (175Β°C) and line a baking sheet with parchment paper.
- In a large bowl, beat together the softened butter and sugar until light and fluffy.
- Add the eggs and vanilla extract, and mix until combined.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until fully incorporated.
- Stir in the mini chocolate chips, crushed peppermint candies, and peppermint extract.
- Drop rounded tablespoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are soft.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Once cooled, dust with powdered sugar and top with extra crushed peppermint, if desired.
Notes
- For an extra minty kick, add a few extra drops of peppermint extract to the dough.
