Ingredients
Scale
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup fresh orange juice
- 1 tbsp orange zest
- 1 tsp vanilla extract
- 1/2 cup buttermilk or milk
For the Glaze (Optional):
- 1/4 cup powdered sugar
- 2 tbsp fresh orange juice
Instructions
- Preheat Oven:
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
- Mix Dry Ingredients:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- Mix Wet Ingredients:
- In a separate bowl, whisk together the melted butter, eggs, orange juice, orange zest, vanilla extract, and buttermilk until smooth.
- Combine:
- Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix, as this can result in dense muffins.
- Fill Muffin Tin:
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake:
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
- Optional Glaze:
- While the muffins are cooling, mix together powdered sugar and orange juice in a small bowl. Drizzle the glaze over the cooled muffins for an extra touch of sweetness.
Notes
- For an extra burst of flavor, you can add a handful of chopped dried cranberries or walnuts to the batter.
- Make sure to use fresh orange juice and zest for the best flavor.
- These muffins are best enjoyed the same day but can be stored in an airtight container for up to 3 days.
