Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup fresh orange juice
  • 1 tbsp orange zest
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk or milk

For the Glaze (Optional):

  • 1/4 cup powdered sugar
  • 2 tbsp fresh orange juice

Instructions

  • Preheat Oven:
    • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  • Mix Dry Ingredients:
    • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • Mix Wet Ingredients:
    • In a separate bowl, whisk together the melted butter, eggs, orange juice, orange zest, vanilla extract, and buttermilk until smooth.
  • Combine:
    • Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix, as this can result in dense muffins.
  • Fill Muffin Tin:
    • Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  • Bake:
    • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • Optional Glaze:
    1. While the muffins are cooling, mix together powdered sugar and orange juice in a small bowl. Drizzle the glaze over the cooled muffins for an extra touch of sweetness.

Notes

  • For an extra burst of flavor, you can add a handful of chopped dried cranberries or walnuts to the batter.
  • Make sure to use fresh orange juice and zest for the best flavor.
  • These muffins are best enjoyed the same day but can be stored in an airtight container for up to 3 days.
