  1. 4 boneless, skinless chicken breasts
  2. 1 lemon (zested and juiced)
  3. 3 cloves garlic, minced
  4. 2 tbsp olive oil
  5. 1 tbsp honey
  6. 1 tsp dried thyme
  7. 1 tsp dried oregano
  8. Salt and pepper, to taste
  9. Fresh parsley, chopped (for garnish)

Instructions

  • In a bowl, combine lemon zest, lemon juice, garlic, olive oil, honey, thyme, oregano, salt, and pepper to make the marinade.
  • Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Refrigerate for at least 30 minutes, preferably 1-2 hours.
  • Heat a large skillet over medium heat. Remove the chicken from the marinade and cook for 6-7 minutes per side, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Remove the chicken from the skillet and let it rest for 5 minutes before serving.
  • Garnish with freshly chopped parsley and serve with your favorite side dish.

Notes

  • For a crispy finish, sear the chicken in a hot skillet and finish cooking in the oven at 375°F for 10-15 minutes.
  • Serve with roasted vegetables, rice, or a simple salad for a complete meal.
