Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes).
  3. Mix in egg yolk and vanilla until well combined.
  4. In a separate bowl, whisk flour, baking powder, and salt; gradually add to the wet mixture until just combined.
  5. Roll dough into one-inch balls and place on prepared sheets about two inches apart.
  6. Create indentations with your thumb in each ball and fill with jam.
  7. Bake for 12 minutes or until edges are lightly golden; cool slightly before transferring to wire racks.
