  • 1 cup canned chickpeas, drained
  • 1 cup cooked quinoa
  • 1/2 cup finely diced red onion
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 cup bread crumbs (gluten-free if needed)
  • 3 tbsp vegan mayonnaise
  • 2 tbsp freshly squeezed lemon juice

Instructions

  1. Rinse quinoa under cold water. In a pot, combine quinoa and 2 cups of water; bring to a boil, then simmer for about 15 minutes until fluffy.
  2. In a large bowl, mash chickpeas until chunky.
  3. Mix in cooked quinoa, red onion, garlic, cumin, paprika, and salt until well combined.
  4. Gradually add bread crumbs until the mixture holds together.
  5. Form into six patties.
  6. Heat oil in a skillet over medium heat; cook each patty for about five minutes per side until golden brown.
