Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and ginger until combined.
  3. In a large mixing bowl, beat the butter with brown sugar and granulated sugar until fluffy.
  4. Mix in the pumpkin puree until well incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Fold in chocolate chips and mini marshmallows evenly into the dough.
  7. Drop spoonfuls of cookie dough onto the prepared baking sheet and bake for 10–12 minutes until golden around the edges but soft in the center.
