Instructions

  1. Brew a cup of strong espresso and let it cool slightly.
  2. In a large bowl, combine mascarpone cheese and sugar; mix until smooth.
  3. Crush half of the pistachios to add texture.
  4. Quickly dip each ladyfinger into the cooled espresso, then layer them in your serving dish.
  5. Spread half of the mascarpone mixture over the ladyfingers, followed by half of the crushed pistachios. Repeat with another layer of ladyfingers and remaining mascarpone.
  6. Cover with plastic wrap and refrigerate for at least four hours or overnight.
  7. Before serving, dust with cocoa powder and garnish with remaining crushed pistachios.
