  • 4 medium bell peppers (any color)
  • 1 cup fresh mushrooms (button or cremini), chopped
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Cut the tops off the bell peppers and remove the seeds. Place them upright in the baking dish.
  3. In a skillet, heat olive oil over medium heat. Sauté onions and garlic until fragrant (about 3 minutes). Add mushrooms and cook until tender.
  4. Stir in cooked rice, Italian seasoning, salt, pepper, and half of the cheese. Remove from heat.
  5. Stuff each bell pepper with the mushroom mixture and top with remaining cheese.
  6. Cover with foil and bake for 25 minutes. Uncover for the last 5 minutes to brown the cheese.
