  • 1 lb Baby Potatoes
  • 4 cloves Fresh Garlic, minced
  • 1 stick (1/2 cup) Unsalted Butter
  • 2 sprigs Fresh Rosemary or Thyme (or 1 tsp dried)
  • Salt and Pepper to taste
  • 2 tbsp Olive Oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and halve the baby potatoes; toss them with olive oil, salt, pepper, and half of the minced garlic.
  3. Spread seasoned potatoes on a parchment-lined baking sheet and roast for 20-25 minutes until golden brown.
  4. While the potatoes roast, heat a cast-iron skillet over medium-high heat. Season the steak with salt and pepper.
  5. Add butter to the hot skillet; when melted, sear the steak for about 4-5 minutes per side or until desired doneness, adding remaining garlic and herbs in the last minute.
  6. Let the steak rest for 5 minutes before slicing against the grain. Serve with roasted potatoes drizzled with leftover garlic butter from the skillet.
