  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cans (15 oz each) great northern or cannellini beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • 8 oz cream cheese, softened
  • 1 cup shredded Monterey Jack or cheddar cheese (for topping)

Instructions

  1. Prepare your ingredients by rinsing the beans and chopping the onion and garlic.
  2. Layer the chicken breasts in the bottom of the crockpot. Add onions, garlic, beans, cumin, chili powder, and pour in chicken broth.
  3. Cover and cook on low for 6 hours or high for 3 hours.
  4. Once cooked, shred the chicken with two forks and return it to the pot.
  5. Stir in softened cream cheese until fully melted and combined.
  6. Serve hot with shredded cheese on top and optional garnishes like cilantro.
