Instructions

  1. Boil the chopped potatoes in salted water until fork-tender, about 15–20 minutes. Drain well.
  2. Roast garlic cloves wrapped in aluminum foil with olive oil at 400°F for 20–25 minutes.
  3. In a pot over low heat, combine hot drained potatoes with butter, cream, roasted garlic, herbs, salt, and pepper. Mash until smooth.
