For the Banana Bread:

  • 2 to 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup buttermilk or milk

For the Cinnamon Swirl:

  1. 1/4 cup granulated sugar
  2. 1 tablespoon ground cinnamon

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  • In a large mixing bowl, cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in mashed bananas and vanilla extract.
  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk, mixing until just combined.
  • In a small bowl, mix together the cinnamon and sugar for the swirl.
  • Pour half of the banana bread batter into the prepared loaf pan. Sprinkle half of the cinnamon-sugar mixture over the batter. Top with the remaining banana bread batter and swirl the cinnamon-sugar mixture through the batter using a knife or skewer.
  • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

  • For an extra touch, you can add chopped walnuts or chocolate chips to the batter.
  • If you don’t have buttermilk, regular milk works just fine.
