  • 80g granulated sugar
  • 4 gelatin sheets
  • 4 egg yolks
  • 100ml milk

Instructions

  1. Chop the dark chocolate and place it in a heatproof bowl.
  2. Soak the gelatin sheets in cold water for 5-10 minutes.
  3. Melt the chocolate gently over low heat until smooth and glossy.
  4. In another bowl, whisk together egg yolks and sugar until pale, then gradually add warm milk while whisking continuously.
  5. Squeeze excess water from the gelatin and stir into the custard mixture until fully dissolved.
  6. Fold whipped cream into the cooled chocolate mixture, then gently fold in pureed raspberries.
  7. Pour into serving cups or a mold and refrigerate for at least 4 hours or until set.
