- 4 gelatin sheets
- 4 egg yolks
- 100ml milk
Instructions
- Chop the dark chocolate and place it in a heatproof bowl.
- Soak the gelatin sheets in cold water for 5-10 minutes.
- Melt the chocolate gently over low heat until smooth and glossy.
- In another bowl, whisk together egg yolks and sugar until pale, then gradually add warm milk while whisking continuously.
- Squeeze excess water from the gelatin and stir into the custard mixture until fully dissolved.
- Fold whipped cream into the cooled chocolate mixture, then gently fold in pureed raspberries.
- Pour into serving cups or a mold and refrigerate for at least 4 hours or until set.
