  1. 1 lb ground beef
  2. 1 small onion, finely chopped
  3. 1 garlic clove, minced
  4. 1 teaspoon ground cumin
  5. 1 teaspoon paprika
  6. ½ teaspoon chili powder
  7. Salt and pepper, to taste
  8. 1 tablespoon olive oil
  9. 1 package empanada dough (store-bought or homemade)
  10. 1 egg (for egg wash)

Instructions

  • In a large skillet, heat olive oil over medium heat. Add the onions and garlic, sautéing until soft.
  • Add the ground beef to the skillet and cook until browned, breaking it up with a spoon.
  • Stir in cumin, paprika, chili powder, salt, and pepper. Cook for another 2-3 minutes, then remove from heat and let the filling cool slightly.
  • Preheat the oven to 375°F (190°C) if baking.
  • Roll out the empanada dough and cut into 4-6 inch circles. Spoon a small amount of the beef mixture onto each circle.
  • Fold the dough over the filling to form a half-moon shape. Press the edges together, sealing them tightly.
  • Brush the empanadas with a beaten egg for a golden finish.
  • Bake for 20-25 minutes, or until golden brown, or fry in hot oil for 3-4 minutes per side until crispy.

Notes

  • For a fun twist, add chopped olives, raisins, or boiled eggs to the filling.
  • These empanadas can be served with a side of salsa or sour cream
