- 1 lb ground beef
- 1 small onion, finely chopped
- 1 garlic clove, minced
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- ½ teaspoon chili powder
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1 package empanada dough (store-bought or homemade)
- 1 egg (for egg wash)
Instructions
- In a large skillet, heat olive oil over medium heat. Add the onions and garlic, sautéing until soft.
- Add the ground beef to the skillet and cook until browned, breaking it up with a spoon.
- Stir in cumin, paprika, chili powder, salt, and pepper. Cook for another 2-3 minutes, then remove from heat and let the filling cool slightly.
- Preheat the oven to 375°F (190°C) if baking.
- Roll out the empanada dough and cut into 4-6 inch circles. Spoon a small amount of the beef mixture onto each circle.
- Fold the dough over the filling to form a half-moon shape. Press the edges together, sealing them tightly.
- Brush the empanadas with a beaten egg for a golden finish.
- Bake for 20-25 minutes, or until golden brown, or fry in hot oil for 3-4 minutes per side until crispy.
Notes
- For a fun twist, add chopped olives, raisins, or boiled eggs to the filling.
- These empanadas can be served with a side of salsa or sour cream
