- 1 Β½ cups graham cracker crumbs
- Β½ cup unsalted butter, melted
- 24 oz cream cheese, softened
- ΒΎ cup granulated sugar
- 3 large eggs, room temperature
- 1 cup full-fat Greek yogurt
- ΒΌ cup honey
- Β½ cup pistachios, chopped (toasted)
- Β½ cup walnuts, chopped (toasted)
- 1 tsp ground cinnamon
- 2 tbsp lemon juice
Instructions
- Preheat oven to 350Β°F (175Β°C) and grease a springform pan.
- In a bowl, mix graham cracker crumbs with melted butter. Press into the bottom of the prepared pan.
- Beat cream cheese until smooth in another bowl. Gradually add sugar and mix in eggs one at a time.
- Incorporate Greek yogurt, honey, lemon juice, cinnamon, pistachios, and walnuts until well combined.
- Pour the filling over the crust and bake for 45-50 minutes until set but slightly jiggly in the center.
- Turn off the oven; leave cheesecake inside with the door ajar for an hour to cool gradually.
- Chill in the refrigerator for at least four hours before serving.
