  • 24 oz cream cheese, softened
  • ΒΎ cup granulated sugar
  • 3 large eggs, room temperature
  • 1 cup full-fat Greek yogurt
  • ΒΌ cup honey
  • Β½ cup pistachios, chopped (toasted)
  • Β½ cup walnuts, chopped (toasted)
  • 1 tsp ground cinnamon
  • 2 tbsp lemon juice

Instructions

  1. Preheat oven to 350Β°F (175Β°C) and grease a springform pan.
  2. In a bowl, mix graham cracker crumbs with melted butter. Press into the bottom of the prepared pan.
  3. Beat cream cheese until smooth in another bowl. Gradually add sugar and mix in eggs one at a time.
  4. Incorporate Greek yogurt, honey, lemon juice, cinnamon, pistachios, and walnuts until well combined.
  5. Pour the filling over the crust and bake for 45-50 minutes until set but slightly jiggly in the center.
  6. Turn off the oven; leave cheesecake inside with the door ajar for an hour to cool gradually.
  7. Chill in the refrigerator for at least four hours before serving.
