Description

  1. 1 lb ground beef
  2. 1 onion, diced
  3. 2 cloves garlic, minced
  4. 2 carrots, peeled and chopped
  5. 2 celery stalks, chopped
  6. 4 cups beef broth
  7. 1 can (14.5 oz) diced tomatoes
  8. 1 cup frozen peas
  9. 2 medium potatoes, peeled and diced
  10. 1 tsp dried oregano
  11. 1 tsp dried basil
  12. Salt and pepper, to taste
  13. 1 tbsp olive oil (for cooking)

Instructions

  • In a large pot, heat olive oil over medium heat. Add ground beef and cook, breaking it apart as it browns. Drain excess fat.
  • Add diced onion, garlic, carrots, and celery to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables soften.
  • Pour in the beef broth and diced tomatoes, followed by the potatoes, oregano, and basil. Stir to combine.
  • Bring the soup to a boil, then reduce the heat and simmer for 20-25 minutes, or until the potatoes are tender.
  • Add frozen peas and cook for an additional 5 minutes.
  • Taste and adjust the seasoning with salt and pepper. Serve hot.

Notes

  • Add other vegetables like corn or green beans for extra variety.
  • This soup can be stored in the fridge for up to 3 days and reheated easily.
