- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 4 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup frozen peas
- 2 medium potatoes, peeled and diced
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- 1 tbsp olive oil (for cooking)
Instructions
- In a large pot, heat olive oil over medium heat. Add ground beef and cook, breaking it apart as it browns. Drain excess fat.
- Add diced onion, garlic, carrots, and celery to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables soften.
- Pour in the beef broth and diced tomatoes, followed by the potatoes, oregano, and basil. Stir to combine.
- Bring the soup to a boil, then reduce the heat and simmer for 20-25 minutes, or until the potatoes are tender.
- Add frozen peas and cook for an additional 5 minutes.
- Taste and adjust the seasoning with salt and pepper. Serve hot.

- Add other vegetables like corn or green beans for extra variety.
