  1. Β½ cup olive oil
  2. 3 tbsp lemon juice
  3. 3 cloves garlic (minced)
  4. 1 tbsp dried oregano
  5. 1 tsp dried basil
  6. 1 tsp salt
  7. Β½ tsp black pepper
  8. ΒΌ tsp red pepper flakes (optional)
  9. 2 tbsp fresh parsley (chopped)

Instructions

  • Prepare the marinade: In a medium bowl, whisk together olive oil, lemon juice, garlic, oregano, basil, salt, pepper, and red pepper flakes (if using).
  • Marinate the chicken: Add chicken breasts (or thighs) to a resealable plastic bag or shallow dish. Pour the marinade over the chicken and toss to coat evenly.
  • Refrigerate: Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 6 hours for maximum flavor.
  • Cook: Remove chicken from marinade and cook as desired (grill, bake, or pan-fry) until the internal temperature reaches 165Β°F (74Β°C).
  • Serve: Garnish with chopped parsley before serving.

Notes

  • For extra flavor, marinate overnight for the best results.
  • This marinade also works wonderfully for lamb or vegetables!
