These Easy Chicken Fajitas are a quick and flavorful dinner option, featuring tender chicken, colorful bell peppers, and onions. All you need is a few ingredients, and you’ll have a delicious meal ready in no time!

  1. 1 lb chicken breast, thinly sliced
  2. 1 red bell pepper, sliced
  3. 1 yellow bell pepper, sliced
  4. 1 onion, sliced
  5. 2 tbsp olive oil
  6. 1 tbsp fajita seasoning
  7. 1 tsp garlic powder
  8. 1 tsp cumin
  9. Salt and pepper, to taste
  10. 8 small tortillas (flour or corn)
  11. Optional toppings: sour cream, salsa, guacamole, shredded cheese, cilantro

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add the sliced chicken and cook for 5-6 minutes, until browned and cooked through.
  • Add the bell peppers and onion to the skillet. Sprinkle with fajita seasoning, garlic powder, cumin, salt, and pepper. Stir well to combine.
  • Cook for another 3-4 minutes, until the vegetables are tender and slightly caramelized.
  • Warm the tortillas in a separate skillet or microwave.
  • Serve the chicken and veggie mixture in the tortillas and top with your favorite toppings.

Notes

  • Add extra heat with diced jalapeΓ±os or spicy fajita seasoning.
  • For a smoky flavor, use smoked paprika.
  • Serve with a side of rice, beans, or a simple salad for a complete meal.
