- 3 cups cooked chicken, shredded
- 1 cup buffalo hot sauce
- 1 cup ranch dressing
- 2 cups shredded cheddar cheese
- 1 cup cream cheese, softened
- 1 cup frozen corn
- 2 cups cooked rice (or cauliflower rice for a low-carb version)
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375Β°F (190Β°C).
- In a skillet, heat olive oil over medium heat. SautΓ© the chicken until warmed through, then stir in the buffalo hot sauce and ranch dressing.
- In a mixing bowl, combine the cream cheese, corn, and rice. Season with salt and pepper.
- In a greased 9×13-inch baking dish, layer the rice mixture, followed by the buffalo chicken, and top with shredded cheddar cheese.
- Bake for 20β25 minutes or until the cheese is melted and bubbly.
