  1. 3 cups cooked chicken, shredded
  2. 1 cup buffalo hot sauce
  3. 1 cup ranch dressing
  4. 2 cups shredded cheddar cheese
  5. 1 cup cream cheese, softened
  6. 1 cup frozen corn
  7. 2 cups cooked rice (or cauliflower rice for a low-carb version)
  8. 1 tbsp olive oil
  9. Salt and pepper to taste

Instructions

  • Preheat oven to 375Β°F (190Β°C).
  • In a skillet, heat olive oil over medium heat. SautΓ© the chicken until warmed through, then stir in the buffalo hot sauce and ranch dressing.
  • In a mixing bowl, combine the cream cheese, corn, and rice. Season with salt and pepper.
  • In a greased 9×13-inch baking dish, layer the rice mixture, followed by the buffalo chicken, and top with shredded cheddar cheese.
  • Bake for 20–25 minutes or until the cheese is melted and bubbly.

Notes

  • For a spicier kick, add extra hot sauce or some diced jalapeΓ±os.
