  1. 1 lb ground beef
  2. 1 packet taco seasoning
  3. 1 cup onion, chopped
  4. 2 cups enchilada sauce
  5. 6 flour tortillas, cut into strips
  6. 2 cups cheddar cheese, shredded
  7. 1 cup sour cream (optional for topping)
  8. 1 tbsp olive oil
  9. Salt and pepper to taste

Instructions

  • Preheat oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Brown the ground beef with onions, and season with taco seasoning, salt, and pepper. Drain any excess fat.
  • In a greased 9×13-inch baking dish, layer the beef mixture, tortilla strips, and half of the enchilada sauce. Repeat with another layer.
  • Top with shredded cheese and the remaining enchilada sauce.
  • Bake for 20–25 minutes or until the cheese is melted and bubbly.
  • Optional: Top with sour cream before serving.

Notes

 

  • For extra spice, try using a spicy enchilada sauce or adding diced green chilies to the beef mixture.
  • You can also add black beans or corn for added texture and flavor.
