Instructions

  1. Preheat oven to 375°F (190°C). In a bowl, combine flour and salt. Cut in vegan butter until the mixture is crumbly.
  2. Form the dough into a ball, wrap in plastic, and chill for 30 minutes.
  3. In another bowl, mix blueberries, sugar, lemon juice, and cornstarch until well combined.
  4. Roll out half of the chilled dough on a floured surface to about 1/8 inch thick and cut into circles using a cookie cutter.
  5. Spoon blueberry filling onto half of each circle, fold over, and crimp edges to seal.
  6. Place on a parchment-lined baking sheet, brush with plant-based milk, and bake for 25-30 minutes until golden brown.
