- 1 lb. ribeye steak, thinly sliced
- 1 medium onion, sliced
- 1 bell pepper, sliced
- 2 cups frozen hash browns, thawed
- 2 cups provolone cheese, shredded
- 1 cup cheddar cheese, shredded
- 1 can cream of mushroom soup
- ½ cup milk
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium-high heat. Sauté onions, peppers, and steak until vegetables are tender and steak is cooked through.
- In a mixing bowl, combine the soup, milk, and season with salt and pepper.
- In a greased baking dish, layer the hash browns, steak mixture, and top with cheese.
- Pour the soup mixture evenly over the casserole.
- Bake for 25–30 minutes or until cheese is bubbly and golden brown.
Notes
- For extra flavor, try adding sautéed mushrooms to the steak mixture.
- You can swap out the hash browns for tater tots or even cooked pasta for a different twist.
