  1. 1 lb cremini or white mushrooms, sliced
  2. 1 red bell pepper, sliced
  3. 1 yellow bell pepper, sliced
  4. 1 onion, sliced
  5. 2 tbsp olive oil
  6. 1 tsp chili powder
  7. 1 tsp cumin
  8. 1/2 tsp smoked paprika
  9. Salt and pepper, to taste
  10. 8 small tortillas (flour or corn)
  11. Optional toppings: diced tomatoes, avocado, fresh cilantro, lime wedges, sour cream

Instructions

  • Heat olive oil in a large skillet over medium heat.
  • Add the sliced onion, bell peppers, and mushrooms to the skillet. SautΓ© for 8-10 minutes, stirring occasionally, until the vegetables are tender and caramelized.
  • Sprinkle in the chili powder, cumin, smoked paprika, salt, and pepper. Stir well to coat the vegetables with the spices. Cook for an additional 2-3 minutes.
  • While the veggies are cooking, warm the tortillas in a separate skillet or microwave.
  • Once the mushroom mixture is done, spoon it into the tortillas.
  • Top with your favorite toppings, such as diced tomatoes, avocado, fresh cilantro, and a squeeze of lime juice.
  • Serve hot and enjoy!

Notes

  • For extra flavor, drizzle with hot sauce or add a dollop of guacamole.
  • You can also add a handful of black beans or corn to make these tacos heartier.
