- 1 lb cremini or white mushrooms, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp smoked paprika
- Salt and pepper, to taste
- 8 small tortillas (flour or corn)
- Optional toppings: diced tomatoes, avocado, fresh cilantro, lime wedges, sour cream
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add the sliced onion, bell peppers, and mushrooms to the skillet. SautΓ© for 8-10 minutes, stirring occasionally, until the vegetables are tender and caramelized.
- Sprinkle in the chili powder, cumin, smoked paprika, salt, and pepper. Stir well to coat the vegetables with the spices. Cook for an additional 2-3 minutes.
- While the veggies are cooking, warm the tortillas in a separate skillet or microwave.
- Once the mushroom mixture is done, spoon it into the tortillas.
- Top with your favorite toppings, such as diced tomatoes, avocado, fresh cilantro, and a squeeze of lime juice.
- Serve hot and enjoy!

- For extra flavor, drizzle with hot sauce or add a dollop of guacamole.
- You can also add a handful of black beans or corn to make these tacos heartier.
