- 3 medium potatoes, peeled and diced
- 2 cups broccoli florets
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 Β½ cups shredded cheddar cheese
- 1 cup milk
- Β½ cup heavy cream
- 2 tbsp butter
- 2 tbsp all-purpose flour
- Salt and pepper, to taste
Instructions
- In a large pot, melt butter over medium heat. Add the onions and garlic, cooking until softened.
- Sprinkle in the flour, stirring to form a roux, and cook for 1-2 minutes.
- Gradually add the broth, whisking constantly to avoid lumps. Bring to a boil.
- Add the potatoes and cook for 10-15 minutes, until tender.
- Stir in the broccoli and cook for an additional 5-7 minutes, until tender.
- Reduce the heat to low, and slowly add the milk and heavy cream, stirring until smooth.
- Add the shredded cheddar cheese, stirring until melted and the soup is creamy.
- Season with salt and pepper to taste.
- Serve hot, and enjoy!
Notes
- For a smoother soup, use an immersion blender to blend part of the soup before adding the cheese.
- Add crumbled bacon on top for a tasty crunch.
