  1. 3 medium potatoes, peeled and diced
  2. 2 cups broccoli florets
  3. 1 medium onion, chopped
  4. 2 cloves garlic, minced
  5. 4 cups vegetable or chicken broth
  6. 1 Β½ cups shredded cheddar cheese
  7. 1 cup milk
  8. Β½ cup heavy cream
  9. 2 tbsp butter
  10. 2 tbsp all-purpose flour
  11. Salt and pepper, to taste

Instructions

  • In a large pot, melt butter over medium heat. Add the onions and garlic, cooking until softened.
  • Sprinkle in the flour, stirring to form a roux, and cook for 1-2 minutes.
  • Gradually add the broth, whisking constantly to avoid lumps. Bring to a boil.
  • Add the potatoes and cook for 10-15 minutes, until tender.
  • Stir in the broccoli and cook for an additional 5-7 minutes, until tender.
  • Reduce the heat to low, and slowly add the milk and heavy cream, stirring until smooth.
  • Add the shredded cheddar cheese, stirring until melted and the soup is creamy.
  • Season with salt and pepper to taste.
  • Serve hot, and enjoy!

Notes

  • For a smoother soup, use an immersion blender to blend part of the soup before adding the cheese.
  • Add crumbled bacon on top for a tasty crunch.
