- 4 large fresh croissants
- 8 oz sliced smoked ham
- 1 cup shredded sharp cheddar cheese
- 1/4 cup pure maple syrup
- 2 tbsp Dijon mustard
- 4 large eggs
- 2 cups fresh spinach or arugula
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a small bowl, whisk together maple syrup and Dijon mustard until well combined.
- Sauté spinach in a skillet over medium heat for about 2-3 minutes until wilted. Set aside.
- In the same skillet, scramble beaten eggs seasoned with salt and pepper for 3-4 minutes until just set.
- Slice croissants in half lengthwise. Layer ham, sautéed spinach, scrambled eggs, and cheese on each half. Drizzle with maple mustard sauce.
- Bake on the prepared baking sheet for approximately 10 minutes or until the cheese melts and croissants are golden brown.
