  • 1 cup shredded sharp cheddar cheese

  • 2 tbsp Dijon mustard
  • 4 large eggs
  • 2 cups fresh spinach or arugula
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together maple syrup and Dijon mustard until well combined.
  3. Sauté spinach in a skillet over medium heat for about 2-3 minutes until wilted. Set aside.
  4. In the same skillet, scramble beaten eggs seasoned with salt and pepper for 3-4 minutes until just set.
