  1. 1 lb Italian sausage (mild or spicy)
  2. 4 slices bacon, chopped
  3. 1 small onion, diced
  4. 3 cloves garlic, minced
  5. 4 cups chicken broth
  6. 1 cup heavy cream
  7. 4 cups fresh kale, chopped
  8. 1/2 tsp red pepper flakes (optional)
  9. Salt and pepper, to taste
  10. 1/2 cup Parmesan cheese, grated (optional)

Instructions

  • In a large pot, cook bacon over medium heat until crispy. Remove bacon and set aside, leaving some bacon fat in the pot.
  • Add the Italian sausage to the pot and cook, breaking it into crumbles, until browned and cooked through.
  • Stir in the onion and garlic, cooking for 3-4 minutes until the onion softens.
  • Pour in the chicken broth and bring the soup to a simmer.
  • Add the kale, red pepper flakes (if using), salt, and pepper. Simmer for 5-7 minutes, until the kale is tender.
  • Lower the heat and stir in the heavy cream. Let it cook for another 2-3 minutes to heat through.
  • Stir in the cooked bacon and Parmesan cheese, if using.
  • Serve hot and enjoy!

  • For a dairy-free version, you can use coconut milk or almond milk instead of heavy cream.
