  • 1 medium cauliflower head, grated or cauliflower rice (about 4 cups)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade)
  • 1/4 cup tomato paste
  • 1/2 cup beef broth
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup diced tomatoes (optional)
  • 1/4 cup sliced olives (optional)
  • 1/4 cup chopped green onions (optional)
  • Salt and pepper to taste

Instructions

  • Preheat Oven:
    • Preheat your oven to 350Β°F (175Β°C). Grease a 9Γ—9-inch casserole dish or a similar size baking dish.
  • Cook the Beef:
    • In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
    • Add the diced onion and minced garlic to the beef, and cook until softened, about 3-4 minutes.
  • Add Taco Seasoning:
    • Stir in the taco seasoning, tomato paste, and beef broth. Simmer for 5-7 minutes until the mixture thickens. Season with salt and pepper to taste.
  • Prepare Cauliflower Rice:
    • In a separate skillet, sautΓ© the cauliflower rice over medium heat for 3-4 minutes, until tender. Season with a pinch of salt and pepper.
  • Assemble the Casserole:
    • Layer the bottom of the casserole dish with the cooked cauliflower rice.
    • Spread the beef mixture evenly on top of the rice.
    • Top with shredded cheddar cheese, then bake in the oven for 10-15 minutes, or until the cheese is melted and bubbly.
  • Serve:
    1. Once the casserole is done, remove from the oven and top with sour cream, diced tomatoes, olives, and green onions (optional).
