- 1 lb ground beef
- 1 medium cauliflower head, grated or cauliflower rice (about 4 cups)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade)
- 1/4 cup tomato paste
- 1/2 cup beef broth
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup diced tomatoes (optional)
- 1/4 cup sliced olives (optional)
- 1/4 cup chopped green onions (optional)
- Salt and pepper to taste
Instructions
- Preheat Oven:
- Preheat your oven to 350Β°F (175Β°C). Grease a 9Γ9-inch casserole dish or a similar size baking dish.
- Cook the Beef:
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the diced onion and minced garlic to the beef, and cook until softened, about 3-4 minutes.
- Add Taco Seasoning:
- Stir in the taco seasoning, tomato paste, and beef broth. Simmer for 5-7 minutes until the mixture thickens. Season with salt and pepper to taste.
- Prepare Cauliflower Rice:
- In a separate skillet, sautΓ© the cauliflower rice over medium heat for 3-4 minutes, until tender. Season with a pinch of salt and pepper.
- Assemble the Casserole:
- Layer the bottom of the casserole dish with the cooked cauliflower rice.
- Spread the beef mixture evenly on top of the rice.
- Top with shredded cheddar cheese, then bake in the oven for 10-15 minutes, or until the cheese is melted and bubbly.
- Serve:
- Once the casserole is done, remove from the oven and top with sour cream, diced tomatoes, olives, and green onions (optional).
Notes
- Feel free to add avocado slices on top for an extra creamy texture!
- You can substitute ground turkey or chicken for a leaner option.
