- 1 can (14.9 oz) Guinness stout
- 2 large onions, chopped
- 4 carrots, sliced
- 3 Yukon Gold potatoes, diced
- 4 cloves garlic, minced
- 4 cups low-sodium beef broth
- 2 bay leaves
- Fresh thyme
Instructions
- Chop all vegetables into bite-sized pieces.
- In a large pot, heat oil over medium-high heat. Sear beef chunks until golden brown on all sides; remove and set aside.
- Sauté onions and garlic in the pot until softened.
- Pour in Guinness and scrape any browned bits from the pot.
- Add back the beef along with carrots, potatoes, bay leaves, thyme, and enough beef broth to cover.
- Bring to a gentle boil, reduce heat to low, cover, and simmer for 2-3 hours until meat is tender.
