  • 2 lbs beef chuck roast, cut into chunks
  • 1 can (14.9 oz) Guinness stout
  • 2 large onions, chopped
  • 4 carrots, sliced
  • 3 Yukon Gold potatoes, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • Fresh thyme

Instructions

  1. Chop all vegetables into bite-sized pieces.
  2. In a large pot, heat oil over medium-high heat. Sear beef chunks until golden brown on all sides; remove and set aside.
  3. Sauté onions and garlic in the pot until softened.
  4. Pour in Guinness and scrape any browned bits from the pot.
  5. Add back the beef along with carrots, potatoes, bay leaves, thyme, and enough beef broth to cover.
  6. Bring to a gentle boil, reduce heat to low, cover, and simmer for 2-3 hours until meat is tender.
