- 2 tbsp olive oil
- 1 lb chicken breasts, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (15 oz) crushed tomatoes
- 1 cup marinara sauce
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 cup heavy cream
- 1 cup mozzarella cheese, shredded
- ½ cup Parmesan cheese, grated
- Salt and pepper to taste
- 2 cups croutons (for topping)
Instructions
- Heat olive oil in a large pot over medium heat. Add the diced chicken and cook until browned and cooked through. Remove and set aside.
- In the same pot, sauté the onion and garlic until softened.
- Stir in the chicken broth, crushed tomatoes, marinara sauce, basil, and oregano. Bring to a simmer and cook for 10 minutes.
- Add the heavy cream, cooked chicken, and Parmesan cheese. Stir until the soup is creamy and heated through.
- Season with salt and pepper to taste.
- Serve the soup in bowls, topped with mozzarella cheese and croutons.
Notes
- For extra flavor, sprinkle additional Parmesan cheese on top before serving.
- You can substitute cooked rotisserie chicken for a quicker preparation.
