  1. 2 tbsp olive oil
  2. 1 lb chicken breasts, diced
  3. 1 onion, chopped
  4. 2 cloves garlic, minced
  5. 4 cups chicken broth
  6. 1 can (15 oz) crushed tomatoes
  7. 1 cup marinara sauce
  8. 1 tsp dried basil
  9. 1 tsp dried oregano
  10. 1 cup heavy cream
  11. 1 cup mozzarella cheese, shredded
  12. ½ cup Parmesan cheese, grated
  13. Salt and pepper to taste
  14. 2 cups croutons (for topping)

Instructions

  • Heat olive oil in a large pot over medium heat. Add the diced chicken and cook until browned and cooked through. Remove and set aside.
  • In the same pot, sauté the onion and garlic until softened.
  • Stir in the chicken broth, crushed tomatoes, marinara sauce, basil, and oregano. Bring to a simmer and cook for 10 minutes.
  • Add the heavy cream, cooked chicken, and Parmesan cheese. Stir until the soup is creamy and heated through.
  • Season with salt and pepper to taste.
  • Serve the soup in bowls, topped with mozzarella cheese and croutons.

Notes

  • For extra flavor, sprinkle additional Parmesan cheese on top before serving.
  • You can substitute cooked rotisserie chicken for a quicker preparation.
