  1. 1 lb beef (sirloin or flank steak), thinly sliced
  2. 3 cups cooked rice (preferably cold)
  3. 2 tbsp vegetable oil
  4. 1/2 cup onion, diced
  5. 1/2 cup bell pepper, diced
  6. 1/2 cup carrots, diced
  7. 2 garlic cloves, minced
  8. 2 eggs, beaten
  9. 3 tbsp soy sauce
  10. 1 tbsp oyster sauce
  11. 1 tsp sesame oil
  12. 2 green onions, chopped
  13. Salt and pepper to taste

Instructions

  • Heat 1 tablespoon of vegetable oil in a large pan or wok over medium-high heat. Add the beef slices, season with salt and pepper, and stir-fry for 3-4 minutes until browned and cooked through. Remove the beef and set aside.
  • In the same pan, add the remaining oil and sautΓ© the onion, bell pepper, carrots, and garlic for about 3-4 minutes until softened.
  • Push the vegetables to one side of the pan and pour the beaten eggs into the empty space. Scramble the eggs until cooked through.
  • Add the cold rice to the pan, breaking up any clumps. Stir to combine with the vegetables and eggs.
  • Return the cooked beef to the pan, then add the soy sauce, oyster sauce, and sesame oil. Stir well to coat the rice evenly.
  • Stir in the green onions and cook for another 1-2 minutes until everything is heated through.
  • Taste and adjust the seasoning with more soy sauce, salt, or pepper if needed. Serve hot!

Notes

  • For best results, use cold, day-old rice to avoid soggy fried rice.
  • You can add additional veggies like peas or corn for extra flavor and texture.
  • For a spicier kick, add a dash of chili flakes or hot sauce.
