Ingredients

  • 2 ripe bananas, mashed
  • 1 ½ cups all-purpose flour
  • ¾ cup granulated sugar
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1/3 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • ¼ cup milk

Streusel Topping:

  1. ¼ cup all-purpose flour
  2. ¼ cup brown sugar
  3. 2 tbsp unsalted butter, cold and cubed
  4. ½ tsp cinnamo

Instructions

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a large bowl, mix mashed bananas, melted butter, egg, vanilla extract, and milk.
  • In another bowl, whisk together flour, sugar, baking soda, and salt. Fold the dry ingredients into the wet ingredients until just combined.
  • For the streusel topping, combine flour, brown sugar, cinnamon, and cold butter. Use a fork or pastry cutter to work the butter into the flour mixture until crumbly.
  • Spoon the muffin batter into the muffin tin, filling each cup about ¾ full. Sprinkle the streusel topping over the batter.
  • Bake for 18-22 minutes, or until a toothpick comes out clean. Let cool for 5 minutes before transferring to a wire rack

Notes

  • For added texture, you can stir in chopped nuts or chocolate chips into the muffin batter.
  • These muffins stay fresh for up to 3 days and freeze well for later.
