- 2 ripe bananas, mashed
- 1 ½ cups all-purpose flour
- ¾ cup granulated sugar
- 1 tsp baking soda
- ¼ tsp salt
- 1/3 cup unsalted butter, melted
- 1 large egg
- 1 tsp vanilla extract
- ¼ cup milk
Streusel Topping:
- ¼ cup all-purpose flour
- ¼ cup brown sugar
- 2 tbsp unsalted butter, cold and cubed
- ½ tsp cinnamo
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix mashed bananas, melted butter, egg, vanilla extract, and milk.
- In another bowl, whisk together flour, sugar, baking soda, and salt. Fold the dry ingredients into the wet ingredients until just combined.
- For the streusel topping, combine flour, brown sugar, cinnamon, and cold butter. Use a fork or pastry cutter to work the butter into the flour mixture until crumbly.
- Spoon the muffin batter into the muffin tin, filling each cup about ¾ full. Sprinkle the streusel topping over the batter.
- Bake for 18-22 minutes, or until a toothpick comes out clean. Let cool for 5 minutes before transferring to a wire rack
Notes
- For added texture, you can stir in chopped nuts or chocolate chips into the muffin batter.
- These muffins stay fresh for up to 3 days and freeze well for later.
