- 1 cup dried green or yellow split peas
- 1 large onion, chopped
- 2 medium carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 smoked ham hock (or leftover ham)
- 4 cups vegetable or chicken broth
- 2 bay leaves
- 1 tsp fresh thyme (or ½ tsp dried thyme)
- Salt and pepper to taste
Instructions
- Prepare all ingredients by chopping the onion, carrots, celery, and garlic.
- In a large pot over medium heat, sauté onions in olive oil until translucent (about 5 minutes). Add garlic and sauté for another minute.
- Stir in the carrots, celery, and rinsed split peas. Mix well.
- Pour in the broth and add bay leaves and thyme. Bring to a gentle boil.
- Add the smoked ham hock and reduce heat to low. Cover and simmer for about 1 hour until peas are tender.
- Remove the ham hock; shred any meat back into the soup before discarding bones. Adjust seasoning as needed.
