Instructions

  1. Preheat the oven to 350°F (175°C). Line a jelly roll pan with parchment paper and lightly grease it.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, mix sugar and vegetable oil until smooth. Add buttermilk, eggs, red food coloring, and vanilla; blend until combined.
  4. Gradually add dry ingredients to wet mixture until just combined.
  5. Spread batter evenly in the prepared pan and bake for 15-20 minutes or until a toothpick comes out clean.
  6. Immediately flip onto powdered sugar-dusted parchment paper and roll up while warm; let cool completely.
  7. Beat together cream cheese and powdered sugar until smooth. Unroll the cooled cake, spread filling, then roll back up tightly without parchment.
  8. Wrap in plastic wrap and chill for at least an hour before slicing into servings.
