Ingredients

Scale
  1. 4 boneless, skinless chicken breasts
  2. 1/2 cup sun-dried tomatoes, chopped (packed in oil)
  3. 1 (8 oz) package cream cheese, softened
  4. 1/2 cup heavy cream
  5. 1/4 cup chicken broth
  6. 1 tsp garlic powder
  7. 1 tsp onion powder
  8. 1 tsp dried basil
  9. 1/2 tsp dried oregano
  10. 1/4 tsp red pepper flakes (optional)
  11. Salt and pepper to taste
  12. 1/2 cup grated Parmesan cheese
  13. Fresh basil (for garnish, optional)

Instructions

  • Prepare the Chicken:
    • Place the chicken breasts in the bottom of your slow cooker. Season with salt and pepper.
  • Make the Sauce:
    • In a medium bowl, mix together the sun-dried tomatoes, cream cheese, heavy cream, chicken broth, garlic powder, onion powder, basil, oregano, and red pepper flakes (if using). Stir until well combined.
  • Cook:
    • Pour the creamy sauce mixture over the chicken breasts in the slow cooker.
    • Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is fully cooked and tender.
  • Finish the Dish:
    • Once the chicken is cooked, use two forks to shred the chicken slightly in the sauce. Stir in the Parmesan cheese and mix until smooth and creamy.
  • Serve:
    • Garnish with fresh basil if desired. Serve the chicken and sauce over pasta, rice, or vegetables of your choice.

Notes

  • For a lower-carb option, serve the chicken over cauliflower rice or zucchini noodles.
