Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 1/4 cup Dijon mustard
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 large Yukon Gold potatoes, peeled and cubed (about 1 lb)
  • 4 tbsp butter
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp low-sodium soy sauce

Instructions

  1. Preheat oven to 400°F (200°C). Season chicken breasts with salt and pepper.
  2. In a skillet over medium-high heat, add olive oil and sear chicken for about 6-7 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, sauté minced garlic for one minute. Stir in Dijon mustard and heavy cream until well combined.
  4. Add chicken broth and soy sauce; simmer for five minutes until slightly thickened. Return chicken to skillet, spooning sauce over it.
  5. Transfer to an oven-safe dish if necessary, cover with foil, and bake for about 20 minutes or until cooked through.
  6. Meanwhile, boil cubed potatoes in salted water until tender (15-20 minutes). Drain and mash with butter, salt, and pepper until creamy.
  7. Serve the chicken alongside mashed potatoes drizzled with sauce.
