  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 2 medium carrots, chopped
  • 2 celery stalks, diced
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts at the bottom of the crockpot. Season with salt, pepper, and thyme.
  2. Chop carrots, celery, onion, and garlic; add them on top of the chicken.
  3. Pour rice over the vegetables without stirring.
  4. Add enough chicken broth to submerge all ingredients (approximately four cups).
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. After cooking time is up, shred the chicken using two forks and stir back into the soup.
