Chicken Marsala is a classic Italian-American dish featuring tender chicken breasts cooked in a rich and savory mushroom and Marsala wine sauce. Itโs a flavorful, comforting meal thatโs quick and easy to prepare, perfect for a weeknight dinner or a special occasion.

- 4 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- Salt and pepper, to taste
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 8 oz cremini or white mushrooms, sliced
- 3/4 cup Marsala wine
- 1/2 cup chicken broth
- 1/2 tsp dried thyme
- Fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts with salt and pepper, then dredge them lightly in flour, shaking off any excess.
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat.
- Add the chicken breasts and cook for 4-5 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, melt the remaining tablespoon of butter and add the sliced mushrooms. Cook for about 4-5 minutes, until the mushrooms are browned and softened.
- Pour in the Marsala wine and chicken broth, scraping up any brown bits from the bottom of the pan. Stir in the thyme and bring to a simmer.
- Let the sauce simmer for 5-7 minutes, reducing slightly.
- Return the chicken to the skillet and cook for another 2-3 minutes, spooning the sauce over the chicken.
- Garnish with fresh parsley and serve with mashed potatoes, rice, or pasta.
Notes
- For a lighter version, you can skip the flour dredging and use less butter.
- If you prefer a deeper flavor, you can add a splash of heavy cream to the sauce.
- For a richer sauce, try using a combination of Marsala wine and dry red wine.
