Description

These soft and fluffy banana chocolate chip muffins are the perfect balance of sweet, ripe bananas and rich, melty chocolate chips. Ideal for breakfast, a snack, or dessert!

 

 


Ingredients

  • 3 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 1/2 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

Instructions

  • Preheat oven to 350°F (175°C). Line a muffin tin with paper liners or grease it.
  • In a large bowl, mash the bananas until smooth.
  • Stir in the melted butter, sugar, eggs, and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  • Fold in the chocolate chips.
  • Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  • Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For extra chocolatey flavor, sprinkle some chocolate chips on top of each muffin before baking.
  • Store muffins in an airtight container for up to 3 days.
