Beef Stroganoff is a classic, creamy dish made with tender strips of beef, mushrooms, and onions in a rich, savory sauce. This easy-to-make recipe is perfect for a comforting dinner, served over egg noodles, rice, or mashed potatoes.

- 1 lb beef sirloin or tenderloin, cut into thin strips
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1/2 cup sour cream
- 2 tbsp flour (optional, for thickening)
- Salt and pepper, to taste
- 2 tbsp fresh parsley, chopped (for garnish)
- Cooked egg noodles or rice (for serving)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the beef strips and cook for 3-4 minutes, until browned. Remove the beef from the skillet and set aside.
- In the same skillet, add the chopped onion and cook for 2-3 minutes, until softened. Add the garlic and sliced mushrooms, and cook for another 4-5 minutes, until the mushrooms are tender.
- If using flour, sprinkle it over the mushrooms and onions, stirring to combine. Let it cook for 1 minute to form a roux.
- Pour in the beef broth, Worcestershire sauce, and Dijon mustard, scraping the bottom of the skillet to release any browned bits. Bring to a simmer and cook for 4-5 minutes, allowing the sauce to reduce slightly.
- Stir in the sour cream and return the cooked beef to the skillet. Cook for an additional 3-4 minutes, until the beef is heated through and the sauce is creamy.
- Season with salt and pepper to taste.
- Serve over egg noodles, rice, or mashed potatoes, and garnish with fresh parsley.

- For a lighter version, use Greek yogurt instead of sour cream.
