This Apple Pie Puff Pastry Bake is a simple yet delicious dessert that combines the flaky, buttery goodness of puff pastry with the sweet and spiced flavors of apple pie filling. It’s perfect for a quick treat or holiday dessert, and the best part? It’s incredibly easy to make!

For the filling:

  • 4 medium apples (such as Granny Smith or Honeycrisp), peeled and sliced
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

For the puff pastry:

  1. 2 sheets of puff pastry (thawed if frozen)
  2. 1 egg (for egg wash)
  3. 1 tbsp coarse sugar (optional, for sprinkling)

Instructions

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a bowl, combine the sliced apples, sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Toss to coat evenly and set aside.
  • Roll out one sheet of puff pastry on the prepared baking sheet. Place the apple mixture in the center, spreading it evenly, leaving about 1 inch around the edges.
  • Place the second sheet of puff pastry on top of the apples, sealing the edges by pressing them together with a fork. You can also cut slits in the top pastry to create a vent for the steam.
  • Beat the egg and brush it over the top of the puff pastry to give it a golden finish.
  • Sprinkle the coarse sugar on top, if desired.
  • Bake for 25-30 minutes, or until the puff pastry is golden brown and the apples are tender.
  • Let it cool slightly before slicing and serving. Optional: Serve with a scoop of vanilla ice cream or whipped cream

Notes

  • You can use store-bought apple pie filling for a quicker option.
  • For a richer flavor, add a handful of raisins or chopped walnuts to the filling.
  • This dessert is best served warm and can be stored in an airtight container for up to 2 days.
